Lobster Thermidor
Thank you again to our lovely customer, for this fabulous Lobster Thermidor recipe for 2. Delicious at anytime of the year but especially during the Christmas and New Year celebrations, with a glass of fizz!
Ingredients
1 dressed Lobster 50g butter (diced) 1 shallot finely diced 50ml white wine 1 tspn English mustard 150ml double cream A splash of brandy 80g cheddar or gruyere 1 Tspn olive oil 1 tbsp chopped parsley 25g ParmesanMethod
Gently sweat the shallots down in the oil, then add the wine, cream and mustard and whisk to mix. Add the brandy and whisk in the butter a little at a time to help thicken and emulsify the sauce. Now add the cheese to the sauce followed by the cooked lobster meat and a tablespoon of chopped parsley. Stuff each shell with the filling then top with the grated Parmesan and put them in the oven or under the grill until the cheese has melted and golden. Serve with salad and boiled potatoes or chips.
