Lobster Thermidor

Thank you again to our lovely customer, for this fabulous Lobster Thermidor recipe for 2. Delicious at anytime of the year but especially during the Christmas and New Year celebrations, with a glass of fizz!

Ingredients1 dressed Lobster50g butter (diced)1 shallot finely diced50ml white wine1 tspn English mustard150ml double creamA splash of brandy80g cheddar or gruyere1 Tspn olive oil1 tbsp chopped parsley25g Parmesan

MethodGently sweat the shallots down in the oil, then add the wine, cream and mustard and whisk to mix.Add the brandy and whisk in the butter a little at a time to help thicken and emulsify the sauce.Now add the cheese to the sauce followed by the cooked lobster meat and a tablespoon of chopped parsley.Stuff each shell with the filling then top with the grated Parmesan and put them in the oven or under the grill until the cheese has melted and golden.Serve with salad and boiled potatoes or chips.
